This beautiful grilled halloumi salad has a refreshing lemon honey dressing that perfectly complements the dish’s rich and savory elements. Known for its unique texture and salty flavor, halloumi is a semi-hard cheese that holds up beautifully to grilling, creating a deliciously crispy exterior while remaining soft and creamy inside.

This salad is a celebration of fresh ingredients, combining juicy cherry tomatoes, crisp cucumbers, fragrant basil, and crunchy pine nuts. The cherry tomatoes, in particular, are essential; their sweetness and juiciness elevate the dish, making it a perfect showcase for the peak of tomato season. While grape tomatoes can be used in a pinch, cherry tomatoes provide a burst of flavor that truly enhances the overall experience.

The dressing is a delicate balance of zesty lemon and sweet honey, creating a harmonious blend that enhances the saltiness of the grilled halloumi. This dressing not only adds a refreshing tang but also ties all the ingredients together. The addition of red pepper flakes brings a subtle heat, adding depth to the dish without overpowering the other ingredients.

One of the best aspects of this halloumi Salad is its simplicity. It can be effortlessly thrown together, making it an ideal choice for a quick lunch or a light dinner. Whether you’re enjoying a sunny day outdoors or hosting a summer gathering, this salad is sure to impress. If you don’t have a grill or a pitmaster like Ryan to assist you, fear not! The halloumi can easily be prepared on the stovetop in a pan, ensuring that everyone can enjoy this delicious dish, no matter their cooking setup.
