Halloumi Salad with Lemon Honey Dressing

Ingredients

Lemon Honey Dressing

  • 1 Lemon, juiced
  • 2 tbsp Honey
  • 3 tbsp Olive Oil
  • Salt

Salad

  • 250 g Halloumi
  • 450 g Cherry Tomatoes
  • ½ Cucumber
  • 35 g Pine Nuts, toasted
  • dash Red Pepper Flakes
  • Basil, sliced thin
  • Olive Oil

Instructions

Lemon Honey Dressing

  • Combine the juice of one lemon, honey, olive oil and salt to a jar. Shake to incorporate. Taste and adjust to your liking.
    1 Lemon
    2 tbsp Honey
    3 tbsp Olive Oil
    Salt

Halloumi

  • Slice the halloumi into ½ inch slices and brush with olive oil.
    250 g Halloumi
    Olive Oil
  • Barbeque for 1 minute on each side to achieve grill marks.
  • Allow the halloumi to cool slightly, then cut into bit size squares, add to the salad bowl.

Pine Nuts

  • Add the pine nuts to a dry pan and gently toast on the stove top. Keep a close eye as these will burn quickly.
    35 g Pine Nuts
  • Allow to cool then add to the salad bowl.

Salad

  • Slice the tomatoes in half perpendicular to the stem. This results in a more visually appealing tomato.
    450 g Cherry Tomatoes
  • Cut the half-cucumber in half lengthwise and slice each half into 3 long strips. Cut each strip into chunks that are similar in size to the tomatoes.
    ½ Cucumber
  • Add the tomatoes and cucumbers into the salad bowl.
  • Sprinkle with sliced basil, red pepper flakes to taste and sprinkle salt.

  • Toss with the dressing and serve.
