Instructions
Lemon Honey Dressing
Combine the juice of one lemon, honey, olive oil and salt to a jar. Shake to incorporate. Taste and adjust to your liking.

3 tbsp Olive Oil

Halloumi
Slice the halloumi into ½ inch slices and brush with olive oil.
250 g Halloumi
Olive Oil
Barbeque for 1 minute on each side to achieve grill marks.
Allow the halloumi to cool slightly, then cut into bit size squares, add to the salad bowl.
Pine Nuts
Add the pine nuts to a dry pan and gently toast on the stove top. Keep a close eye as these will burn quickly.

Allow to cool then add to the salad bowl.
Salad
Slice the tomatoes in half perpendicular to the stem. This results in a more visually appealing tomato.
450 g Cherry Tomatoes
Cut the half-cucumber in half lengthwise and slice each half into 3 long strips. Cut each strip into chunks that are similar in size to the tomatoes.
½ Cucumber
Add the tomatoes and cucumbers into the salad bowl.
Sprinkle with sliced basil, red pepper flakes to taste and sprinkle salt.

Toss with the dressing and serve.
