In August of 2023, during the peak of peach season, I served this Peaches and Burrata appetizer.

The ripe peaches with the richness of Burrata cheese creates a beautiful blend of flavors that is both sweet and savory. The addition of crunchy pistachios introduces a nuttiness, enhancing the overall taste and texture of the dish.

One of the best aspects of this recipe is its simplicity. It requires minimal ingredients and can be assembled in just a few minutes, making it ideal for those who love to host without spending hours in the kitchen. While I enjoy making my own crostini from scratch, you can definitely purchase pre-made crostini from your local grocery store. This flexibility allows you to tailor the recipe to your preferences.

If you’re not a fan of Burrata, feel free to substitute it with slices of fresh mozzarella. However, I must say that the creaminess of Burrata adds a unique touch.

This Peaches and Burrata appetizer is perfect for hosting any summer gathering, whether it’s a casual barbecue, a picnic in the park, or an elegant dinner party. The vibrant colours make it a showstopper on any table. As peaches reach their peak during the summer months, this recipe is a wonderful way to celebrate the season and showcase the delicious produce available.

Peach & Burrata Appetizer

Ingredients

  • 1 Ball Burrata
  • 7 Peaches
  • ¼ cup Pistachios
  • Drizzle Olive Oil, extra for brushing crostini
  • Basil
  • Sprinkle Salt
  • Drizzle Honey
  • 1 Baguette

Instructions

  • Preheat oven to 400℉.
  • Crush/chop the pistachios into semi-fine chunks, set aside.
    ¼ cup Pistachios
  • Slice the baguette on a diagonal into 1-inch (or to your liking) crostini. Brush with olive oil, sprinkle with flaky salt, and bake on a baking tray until golden.

  • Split the peaches in half, remove the pit, and brush with olive oil.
    7 Peaches
  • Grill the peaches for 3-4 minutes on a hot ridged pan until slight char marks appear on flesh. You don't want to 'cook' the peaches, you just want a little bit of colour and to warm them up.
  • Once the crostini are ready, place the ball of burrata in the center of a large serving plate and arrange the peaches and crostini around the edge.

  • Drizzle the plate with olive oil, add a sprinkle of salt, top with ripped basil, sprinkle the chopped pistachios, and finally drizzle a little bit of honey.

Notes

The first time I made this Peaches and Burrata Appetizer I had a few friends over in the backyard. One of whom said “this is the best appetizer I’ve ever had at someone’s house”. So please, treat your guests (or just yourself)!
